    Baked Cake Doughnuts w/ Cinnamon Sugar

    I decided to test out my new doughnut pan with this recipe. The doughnuts turned out pretty well, but they were texturally a lot lighter than regular ones; they were kind of like a cross between cake and yeast doughnuts. Does anyone have a recipe that they’d recommend? Thanks!

    Well, just one roll in the picture. I tried this simple recipe, courtesy of The Pastry Affair, and really liked the subtle sweetness. Next time, though, I’m going to try kneading the dough with my hands instead of using a KitchenAid mixer - hopefully I’ll get even softer, fluffier rolls!

    I had leftover sweet tart dough, so I brushed it with egg wash, sprinkled it with sugar, and baked at 350F for a couple of minutes. I might have liked these better than the actual tart

    Strawberry Tart with Vanilla Pastry Cream

    I didn’t know what to get my dad for Father’s Day, so I made him this!

    Not wanting to use store-bought glaze or melted jam, I tried this glaze recipe and ended up really liking it. The tartness balanced really well with the sweetness of the vanilla pastry cream!

    Glaze

    • 1 (6-ounce) can frozen limeade concentrate, thawed
    • 1 tablespoon cornstarch
    • 1 tablespoon fresh lime juice
    • 1/4 cup granulated sugar

    Combine the limeade, cornstarch, lime juice, and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes. Let cool. With a pastry brush, glaze the entire tart. (You’ll have some glaze leftover.)
