    (Variation of this English Tea Scones recipe)

    English Tea Scones with Dried Currants & Orange Zest

    • 1 1/2 cup flour
    • 1/3 cup sugar
    • 1/2 tsp salt
    • 3 tsp baking powder
    • 3 oz. chilled butter
    • 1/3 cup currants (or other dried fruit)
    • 1 tbsp orange or lemon zest
    • 1/2 cup cream
    • 1 egg yolk
    1. Combine the dry ingredients. Add orange zest.
    2. Cut butter into the dry ingredients. (I prefer using my fingers.)
    3. Add dried fruit.
    4. Lightly beat together the cream and the egg; pour mixture over dry ingredients and form it into a ball with your fingers. Do not overmix.
    5. Roll and cut into desired shape.
    6. Bake at 350F for about 20 minutes.
